Essential Ingredients
- All-purpose flour: A staple in all quick bread recipe, this provides structure and ensures the perfect crumb.
- Pistachios: Gives bread a delightful nutty flavor. I prefer to use a mixture of finely and coarsely ground nuts in my quick bread recipe, so I ground roasted pistachios with this 3 in 1 hand blender.
- Sugar: You’ll need white granulated sugar to sweeten the pistachio bread. You can also use light brown sugar instead for a more caramel-like sweetness and deeper flavor.
- Eggs: You’ll need 2 medium eggs for this recipe, which help bind the ingredients and add moisture.
- Milk: Adds moisture and helps create a fine, even crumb. I tried this recipe with semi-skimmed milk and it worked well, but you can use whole milk if you prefer.
- Unsalted Butter: Use melted, unsalted butter for a rich, moist texture that enhances the buttery flavor of the bread. Be sure to cool it slightly before mixing.
- Natural Yogurt: Brings a little tangy flavor and smoothness. You can substitute it with Greek or plain yogurt as well as sour cream if you like.
- Lemon juice: One third cup of lemon juice not only adds a zesty flavor, but also plays a key role in balancing the richness of nuts with the sweetness of the bread, as well as using its acidity to activate the baking soda and baking powder.
- Baking powder & soda: These are essential for making the bread rise and giving it a light, airy texture.
- Salt: To enhance the overall flavor and balance the sweetness and nuts.
- Vanilla sugar: Vanilla adds a lovely flavor to the bread, or you can substitute vanilla extract if you have it on hand.

Success Tip
Pistachio bread comes together in just 3-4 minutes with those simple tools: A pre-wire mixing bowl, a whisk, a spatula, and an 11×4-inch loaf pan or 9×5-inch loaf pan. You’ll also need a hand blender to grind the pistachios, if you’re looking for recommendations, I own and love this 3 in 1 hand blender because it’s easy to use and operate, and comfortable to grip for long periods.
Overview: How to Make Pistachio Bread
Making this delicious pistachio bread is as easy as 1, 2, 3:
- Whisk together the wet ingredients.
- Add the dry ingredients to the wet mixture and whisk until combined.
- Sprinkle the ground pistachios over the batter and bake.

I use 11×4-inch loaf pan in this recipe for pistachio bread. But If you only have a 9×5-inch loaf pan, it will still work perfectly with the same amount of ingredients..
Start by mixing the wet ingredients first, then gently whisk in the dry ingredients, and finally, fold in the ground pistachios.
Adding the pistachios at the end ensures they’re evenly distributed throughout the batter. Mixing them too early may break them down, leading to an uneven texture and potentially altering the bread’s consistency.
You can expect the batter to be creamy and light, with plenty of ground pistachios adding a rich, nutty flavor.
Baking time is around 40 minutes, but start checking for doneness at 35 minutes in case your oven runs hotter. A toothpick inserted into the center should come out clean or with a few moist crumbs.
Can I use Fresh Pistachios in Pistachio Bread?
Although fresh pistachios can be used, roasted pistachios tend to bring out a richer, deeper flavor. Roasting the fresh pistachios before adding them into the bread will bring out their flavor even more. Just spread them out on a baking sheet and bake at 350°F (175°C) for 10 to 15 minutes, or until fragrant.
How Long does Pistachio Bread Stay Fresh?
Pistachio Bread will stay fresh for up to 3-4 days if stored in an airtight container at room temperature. If you want to extend its freshness, you can store it in the refrigerator for up to a week, just be sure to wrap it well to prevent it from drying out. For longer storage, consider freezing Pistachio Bread – it will keep for a couple of months in the freezer, just thaw it out when you’re ready to eat.
Can I add other Ingredients to this Pistachio Bread Recipe?
Absolutely, you can add additional ingredients to this pistachio bread such as chocolate chips, dried fruit (cranberries, apricots or raisins) can add a chewy sweetness.
